APIS Irpinia Fiano Spumante D.O.C. Brut

Made from 100% fiano grapes.

Wine making process:

Made from 100% fiano grapes. The grapes are harvested by hand before their harvesting maturation to give acidity and freshness. This is followed by classical fermentation in steel tanks at low temperatures for about 15 days. Once the fermentation is finished, the wine rests on its fine lees for about 4 months and after this period of time it is filtered. At this point the autoclave step begins (method charmat) where the wine refines for about 3 months at low temperatures to allow an excellent intake of foam. It is again filtered and bottled and put on the market after about 2 months.

Organoleptic features:

With a straw yellow color and a good perlage, persistent and delicate. Flavours on the nose are of hazelnut and exotic fruit. The mouthfeel is delicate, fresh, harmonious with an aftertaste of exotic notes. It can accompany both aperitifs, first and second courses based on fish or fresh cheeses.
