Aglianico 100% coming from ancient vines. Produced from a traditional fermentation with temperature controlled.

Ageing in 30 litres’ chestnut barrels. This wine is produced only and exclusively in great crops.

About 800 g per vine in a total of 250 vines.

Wine making process:

Grapes are harvested when they are overripe. Grapes are fermented in a traditional way, without rasping, trying not to ruin the grapes too much. Fermentation lasts two weeks thanks to the help of selected yeasts and after the first transfer the wine ages in 30 litres' chestnut barrels where malolactic fermentation takes place. After 6 months of ageing the wine goes into stainless steel barrels. It's finally bottled without filtration and the bottles are sold after a year.

Organoleptic features:

Impenetrable red intense ruby colour. First smells are chocolate, tobacco and leather, with fermentation's smells and cherry in alcohol ones. The taste is full-bodied, intense and deep. The wine has great softness and good acidity. Its colour, tannins and its great structure make it a meditation wine. It's advisable to consume the wine with 70% dark chocolate with medium toasted hazelnuts. First production: 2014.
